J. H. Conway, _On Number And Games_, (maybe Academic Press, 1976 ?),
has nearly half the book devoted to the theory.

E. R. Berlekamp, J. H. Conway, R. K. Guy, _Winning Ways_, Academic
Press, 1982 (two volumes) contains also the basic facts of the theory,
but in a more applicated style (many many examples).
