7x7 has a branching factor closer to chess for much of the game.

A strict chess style opening book  would have to massive, I believe it
would be too easy to get out of book quickly.

5x5 already  can play perfect.  7x7  cannot be databased  yet, but has
other possibilities.   You could certainly do  interesting things with
patterns.
